Why We Do What We Do
We like wine: the intrigue of a new varietal, the new expression of an old varietal friend. Our list is designed for play. We give much thought (and taste bud research) to offering bottles that our guests have yet to know, yet to try, or having tried and found a favorite, just can’t shake the craving for more. We stay primarily in California, but we reach beyond the Valley & State to find examples of the ancestry of Californian wine and for one purely self indulgent reason: Jim & Bettie love Italian wines; Preston believes that just as a balanced bite of food must have sweet to compliment the other base flavors (bitter, acid, salt and umami) - a list must have sweet to round its composition; Nichole can’t get enough of the grape blend; and then there is our mutual affinity for that whimsical Pinot Noir. Because we are always on the hunt for the next great taste, our list is always changing and expanding.

The General’s Daughter Corkage Policy
Guests are welcome to bring in a special bottle of wine that is not on our list to enjoy with dinner at no charge; a second bottle, or first bottle brought in that is offered on our list, will be charged a corkage fee of $25; all additional bottles will be charged a corkage fee of $50.

Sauvignon Blanc & Semillon

Sauvignon Blanc characteristics vary from grassy and herbaceous to grapefruit, gooseberry, green plums, melon, apricots and even peach. Though wine making styles give this varietal a range of light and bright to medium bodied with a softer mouth feel, enthusiasts count on Sauvignon Blanc to deliver a crisp acidy that compliments many food styles and wakens the taste buds.

Semillon is often a perfect blending mate for Sauvignon Blanc, meeting the Sauvignon’s pungent aroma and vigorous acidity, with lower acid but higher alcohol, citrus and fig notes, and an ability to develop additional flavor complexity through age and a natural affinity for oak.

Chardonnay
California’s favorite white, Chardonnay, grows well in a wide range of climates and is found throughout the world beyond just Burgundy, Champagne and California, even in Australia, South Africa and Italy. The grape’s adaptability doesn’t stop with its growing conditions. Chardonnay’s natural affinity for oak paired with its variable acid and fruit profile can make for a mouth of white peach, nectarine & mineral as in Dumol’s Chloe; to the orange marmalade and toasted hazelnut of Walter Hansel’s Russian River family vineyards; or the lemon pineapple butterscotch of Pahlmeyer’s Napa fruit. The flavor range of is vast. When playing in chardonnay: do you enjoy mineral, a buttery soft mouth feel, fruit that is tropical or temperate, a citrus zip, vanilla, toasted nuts, coconut?

Pinot Noir

Ah to satisfy this grape, she is genetically unstable, and finicky, but elegant beyond compare. Nose of violets, game & mushrooms to delicate raspberry, dusty strawberries, ripe black cherry, cola.

Zinfandel
Truly this is New America’s grape, unsure of its ancient lineage, remarkably suited to now. With some vineyards producing since before prohibition, a site of the gnarly fingered zinfandel vine makes us feel that we have really seen California Wine Country. Full of flavor, from brambly berries or spice ranging from gritty earth to coriander, nutmeg, allspice, white pepper and beyond, to a style that is in your face rich raisined & jammy high in alcohol. Zinfandel shares America’s tendency to excess, the pure strength of its personality making us crave a glass.

The Rhones
What a playful bunch of grapes are the Rhones. Sometimes brave enough to stand solitary, most often found shouldering up together: the spice and soft texture of Cinsault; color and tannin of Carignane; luscious fruit of Grenache; acidity and gamey quality of Mourvedre; jammy fruit and blue/black color of Petite Sirah; and the oh so abundant plethora of syrah flavors - smoked meat, raspberry, plum, tar, dust, black pepper, olives.
